Ingredients:
• 1 package French Vanilla Cake Mix
• 1 cup (about 3) ripe bananas, mashed
• 1 cup (8 oz. sour cream)
• ⅓ cup vegetable oil
• ½ teaspoon banana extract (Really intensifies the flavor!)
• 2 teaspoons vanilla extract
• 3 eggs
Banana Icing Recipe:
Ingredients:
• 1 package cream cheese
• ¼ cup butter (only ½ a stick)
• 2 cups powdered sugar
• 1 teaspoon vanilla extract
• Plus, 1 ripe banana, mashed
Method: (for Banana Cake)
- Preheat oven to 350°. Stir all ingredients together. (You really don’t even need a mixer for this part.) I just stirred gently until ingredients were incorporated.
- Pour batter into pan that has been sprayed with cooking spray and sprinkled with a little flour – so it won’t stick. I used a Bundt cake pan, but you could use a 9×13″ pan if you’d like.
- Bake for 35 minutes or until a toothpick inserted into the center comes out clean. Cool completely.
Method: (for Banana Icing)
- Beat cream cheese, banana, butter and vanilla together until blended. Gradually add powdered sugar until it’s the consistency you like.
- Frost your cooled Banana Cake and enjoy!
